Gina Polidori

Co-Owner, Product Creator

Gina Polidori is a seasoned professional in the food industry with over 20 years of experience. She is the owner and creative director of SLC Underground Sweets. In her career, she has worked in various positions such as bakery manager and bakery specialist. She has also trained and created recipes for bakeries inside grocery stores in the mountain west region and eastern region. Gina is an alumnus of the Culinary Institute of America located in New York, where she studied baking and pastries.

Fifteen years ago, Gina began gifting truffles to friends and family during the winter holidays. Her sweets became so popular that people began asking to buy them. However, Gina initially refused to sell them because she enjoyed gifting them. In 2022, Gina decided to start her own business and sold her creations at Wheeler Farm’s Winter Market, where she sold out every time. Gina is now looking forward to participating in more local farmers’ markets and her goal is to make her sweets accessible to everyone through local grocery stores.
