The onsite distillery distills and blends Eight Settlers spirits using old school techniques with a modern twist to produce spirits to the highest standard, using the best ingredients available. The Distillery offers guests a behind-the-scenes look at Eight Settlers’ distilling and blending process.

We currently offer four staple product with additional seasonal releases: Ragtown American Whiskey Blended and handcrafted locally – Ragtown is a unique blend of two robust and smooth straight American whiskeys with a bold yet smooth aroma. Devil’s Gate Bourbon is aged in oak barrels in small batches to enhance its oaky, vanilla aroma with a satisfying and smooth finish. Butler Vodka is made in small batches, and a minimum triple distilled to ensure the highest quality and flavor. Beginning with a smooth, medium-bodied flavor and array of lightly sweet aromas, Butler Vodka has a distinct crisp and clean finish. Among Green Ditch’s seven carefully curated botanicals, star anise and citrus peel are noticeably vibrant along with the upfront juniper kick in this refreshingly unique gin.

Eight Settlers Restaurant menu takes modern and traditional American cuisine and elevates it with seasonal twists. It is a Midwest style menu with inspiration from around the world, creating casual chic menus for all day dining. This combination creates truly unique menus with something to delight all guests.

After owning a business in Utah and successfully pioneering a restaurant and sports bar in California for 14 years, coupled with many years of researching the distillery business, we were ready to take the big leap to fulfill our longtime dream of opening our own distillery. Radu enjoyed distilling spirits as a young boy with his grandpa in his home country of Romania, and had his mind set on distilling professionally someday. As Utah residents for more than 28 years, starting our next venture in our home state was a logical decision. We found Utah to be a beautiful state, a wonderful place to raise our family with its welcoming and friendly residents with strong sense of community, and an inviting place for entrepreneurship Our hearts and souls are immersed in Eight settlers and finally after so many years of planning, we have finally been able to see our carefully crafted dream materializing. It’s been an emotional and priceless journey for both of us and we embrace the opportunity to share it.
