Roasted Butternut Squash
Roasted Butternut squash is a delicious side dish!
Roasted Butternut Squash
Ingredients
- 2 lbs. butternut squash peeled & cubed
- 2 medium onions peeled & cut into wedges
- 1 tbsp olive oil
- 1 tbsp fresh sage minced
- 1 tbsp fresh rosemary minced
- 1 tbsp fresh thyme minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- Place the butternut squash & onion wedges onto pan, giving enough space between each other, drizzle with olive oil.
- Sprinkle the fresh herbs over the top and stir to combine
- Bake for 20 minutes or util squash is tender, stirring occasionally.
